It was in my teens that I discovered I loved Hot Foods and in particular Hot Sauce. I would go from bar to bar and from restaurant to restaurant in search of the city's best. Back in those days it was 'the Hotter the better' and I wasn't happy unless I was sweating profusely with tears running down my cheeks from the heat. I was lucky to have tried so many different styles from smokey to sweet to salty to citrus and on...

I had never tried to make it myself until one day while working at a restaurant one of the cooks approached me knowing that I was a Hot Sauce fan, "Harkness" he said "check out this Hot Sauce I made last night when I was bombed." I tasted it and man was it fantastic, great heat with some real length to the flavor. "Do you remember what you did"? I asked. He then, to the best of his ability, recalled the ingredients and method he used. That weekend I made my first ever batch. It was Great but could be more improved so I continued to experiment, and experiment some more, all the while picking the brains of every single chef I ever came across, to ask about secret ingredients one might try to incorporate into a Hot Sauce. And so, 5 years later, and I’m guessing close to a 100 different batches later, HARKNESS Hot Sauce was born!

The style I chose to go for is not a blow-your-face-off hot sauce, but more like a condiment with a kick. I wanted to create a Hot Sauce so tasty that you could eat it with a spoon. In the end  HARKNESS Hot Sauce lets you enjoy some satisfying heat without too much of a shock to the system and is Fantastic on just about anything.
